Soba Noodles

Here’s how to make them at home.
You’ll need:
1 cup soba noodles (or any other type of noodle)
2 cups water
3 tablespoons soy sauce

Soak the noodles in cold water for about 20 minutes. Drain and set aside.
This recipe makes 4 servings.

In a large pot over medium heat, add 1 tablespoon of oil. Add the garlic and ginger and cook until fragrant, about 30 seconds.
Add the carrots and cook until softened, about 5 minutes. Furthermore, add the soy sauce, mirin, sake, sugar, and water. Bring to a boil, then reduce the heat to low and simmer for 15 minutes. In brief, remove from the heat and let cool slightly. Transfer to a blender and blend until smooth. Return to the pan and bring back up to a simmer. Cook for another 2 minutes. Serve hot with soba noodles.

Add the soba noodles and stir to coat with the oil. Cook for 2 minutes or until they start to soften.
This recipe makes enough for 4 servings. It’s easy to make and tastes great!

Add the soy sauce, mirin, sake, sugar, and sesame oil. Stir to combine.
Finally, in a large pot, bring 2 quarts water to a boil. Add the soba noodles and stir well. Reduce heat to medium low and simmer until tender, about 5 minutes. Drain and rinse with cold water. Transfer to a serving bowl. Toss with the soy sauce mixture. Serve immediately.
