Carrots are an excellent source of vitamin A, fiber, potassium, and other nutrients that promote good health. They’re also delicious when cooked in a variety of ways. Here are five easy carrot recipes for you to try at home.

Roasted Carrots with Honey Mustard Dressing

This recipe calls for carrots that are cut into small pieces so they cook quickly. If you prefer larger pieces, simply leave them whole. You can use any type of honey mustard dressing you’d like; just make sure it’s not too spicy.

Baked Carrots with Goat Cheese and Pecans

To prepare these baked carrots, first peel the carrots and then slice them lengthwise. Next, place them in a baking dish and drizzle them with olive oil. Sprinkle them with salt and pepper. Bake them at 350 degrees F for 30 minutes. While the carrots bake, mix together the goat cheese, pecans, and honey mustard dressing. After the carrots come out of the oven, top them with the goat cheese mixture. Serve immediately.
