Gnocchetti Pasta

is a type of Italian pasta that is made from semolina flour and water. It is extruded through a die to create its unique shape and then cut into small pieces. Gnocchetti pasta is traditionally served with a sauce or in soup.

This pasta is a delicious and nutritious option for your next meal. This type of pasta is high in protein and fiber and low in carbohydrates. It is also cholesterol-free and has no added sugar. Gnocchetti pasta is fun to make and can be made ahead of time so you can have a healthy meal ready in minutes!

To make gnocchetti pasta, you will need:

  • 1 cup semolina flour
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/2 cup tomato sauce
  • 1/4 cup heavy cream
  • 1/4 cup grated mozzarella cheese
  • 1 tablespoon chopped fresh basil

Directions:

  1. In a large bowl, whisk together semolina flour, water, salt, and olive oil until the mixture forms a soft dough. If the dough is too dry, add more water 1 tablespoon at a time until it comes together. The dough too wet, add more semolina flour 1 tablespoon at a time until comes together.
  2. Knead the dough for about 5 minutes until it forms a smooth ball. Cover the dough with plastic wrap and let it rest for 30 minutes.
  3. Cut the dough into 8 equal pieces. On a lightly floured surface, roll each piece of dough into a long rope about 1/2 inch in diameter. Cut the ropes into 1/2 inch pieces. Layout the gnocchetti on a lightly floured surface and let them dry while you prepare the sauce.
  4. In a large saucepan over medium heat, cook garlic in olive oil until fragrant. Add tomato sauce and heavy cream and bring to a simmer. Season with salt and pepper to taste. Stir in mozzarella cheese and basil and cook for about 5 minutes until the cheese melted and the sauce heated through.
  5. Add the gnocchetti to the saucepan and cook for 2-3 minutes until they are tender but still firm to the bite. Serve immediately with grated Parmesan cheese on top. Enjoy!
