Begin by washing the radish and cutting it into cubes or thin slices. Place the cut vegetables into a large bowl and add the salt. Gently mix the vegetables until they become coated with the salt. This will help draw out any excess moisture from the vegetables. Cover the bowl with plastic wrap and let it sit for an hour or two before draining any excess liquid from the mixture.

Once you have drained off any liquid from the bowl, add in your sugar, fish sauce or shrimp paste (or both), garlic, ginger root slices and chili pepper flakes. Mix everything together until all of your ingredients combined evenly throughout the vegetable mixture. Finally, transfer your Kkakdugi into an airtight container and store it in your refrigerator for up to two weeks.
