Recipe Kimchi at Home

Kimchi is a traditional Korean side dish made with fermented cabbage and other vegetables. It has a unique flavor and can be eaten on its own or added to dishes such as soups, stews, noodles, and rice. If you’ve never tried making your own kimchi before, this guide will show you how to make it in five simple steps.

Step 1: Prepare the Cabbage

The first step in making your own recipe kimchi is to prepare the cabbage. Start by cutting the cabbage into quarters and then removing the core from each quarter. Then cut the quarters into thin strips about 2 inches wide and place them in a large bowl filled with cold water for about 10 minutes. After that, drain the water and rinse the cabbage strips with cold running water before setting aside to dry.

Step 2: Make the Marinade

The next step is to make the marinade for your kimchi. To do this, mix together 1 cup of gochugaru (Korean red pepper flakes.) 1/4 cup of garlic paste, 1/4 cup of ginger paste, 3 tablespoons of fish sauce, 3 tablespoons of sugar, and 1/2 cup of water in a medium-sized bowl until everything is well combined. Feel free to add more or less of any ingredient based on your personal taste preferences.

Step 3: Assemble Ingredients

Now that you have your marinade ready and your cabbage drained, it’s time to assemble all of your ingredients together for kimchi-making! In addition to the cabbage strips and marinade from Steps 1 and 2 above, you will also need some additional vegetables such as carrots, radishes, onions, scallions — whatever you prefer! Slice up all these vegetables into thin strips as well so they are ready for mixing later on.

Step 4: Mix Together

Now it’s time to mix everything together! Put all the vegetables including the prepared cabbage strips into an extra-large bowl along with your marinade mixture from Step 2 above. Use clean hands or gloves to mix everything together until all of the vegetables are well coated with the marinade mixture (this should take around 5 minutes).
Make sure not to overmix as this could cause too much liquid buildup inside your jar which can lead to spoilage during fermentation later on. Once everything evenly mixed together set aside for 10 minutes so that all flavors can meld together nicely before proceeding onto Step 5 below!

Step 5: Fermenting & Storing Last but not least

Fermenting & storing! Transfer your kimchi mixture into an airtight container or glass jar (make sure it has enough room for expansion.) Then close tightly with a lid or plastic wrap before placing somewhere cool and dark away from direct sunlight. Let sit undisturbed for at least one week so that fermentation can occur properly. After one week open up container/jar every couple days just long enough to release built up gases. Cose again tightly afterwards until desired flavor achieved (usually takes about two weeks). Once desired flavor achieved. Store in refrigerator where it will last several months depending on freshness when made initially!
