Baba Ganoush

Baba Ganoush is an eggplant dip made from roasted eggplants blended with tahini sauce. It’s delicious served as a side dish or appetizer. Ganoush is also a popular Middle Eastern appetizer that combines roasted eggplant with tahini sauce for a creamy dip. This recipe uses fresh eggplants instead of canned ones.

Roast Eggplants.

To roast the eggplants, preheat the oven to 200 degrees Celsius. Cut off the stem end of each eggplant and place them cut side down on a baking sheet lined with parchment paper. Bake until soft, about 30 minutes. Remove from the oven and let cool slightly before peeling away the skin.

Blend Tahini Sauce.

In a food processor, combine the garlic cloves, lemon juice, olive oil, salt, and pepper. Pulse until smooth. Add the tahini paste and process again until combined. Transfer to a bowl and stir in the cilantro. Serve at room temperature.

Add Other Ingredients.

You can add other ingredients to make your baba ganoush more flavorful. Try adding chopped parsley, mint leaves, or even some fresh herbs. Or try using different spices such as cinnamon, nutmeg, or paprika.

Serve!

This recipe makes enough for 4 servings. If you would like to serve more people, double the recipe.
