There are hundreds of different kinds of mushrooms available today. Most people think of white button mushrooms when they hear the word “mushroom.” However, there are other varieties of mushrooms such as portobello, cremini, shiitake, oyster, and more. All these mushrooms are edible and delicious.
Creamy Mushroom Soup
This recipe uses fresh mushrooms and cream cheese. It is easy to make and tastes wonderful.
Mushroom Risotto
You will need:
- 1 cup of Arborio rice (or any other short grain rice)
- 2 cups of water
- 1/2 cup of white wine
Mushrooms with Pasta with Parmesan Cheese
In a large pot, bring the water and wine to a boil. Add the mushrooms and cook until tender, about 5 minutes. Drain the liquid from the pan and set aside. In a medium saucepan, heat the oil over medium heat. Add the garlic and saute until fragrant, about 30 seconds. Stir in the flour and cook for 3 minutes. Whisk in the milk and stir constantly until thickened, about 5 minutes. Remove from heat and whisk in the cheese. Season with salt and pepper. Add the cooked rice to the mushroom mixture and toss well. Serve immediately topped with the cheese sauce.
Mushroom Lasagna
This recipe makes a lot of lasagna noodles so you might want to make extra. It freezes very well.
