Penne with Tomato Sauce

Lasagna

You will need: 1 package of lasagna noodles (I used Trader Joe’s) 2 cups ricotta cheese 1/2 cup mozzarella cheese 1/4 cup parmesan cheese 3 eggs 1/2 teaspoon salt 1/8 teaspoon pepper 1/2 pound spinach 1/3 cup olive oil 1/4 cup water 1/2 cup grated parmesan cheese Preheat oven to 350 degrees F. Cook lasagna noodles according to directions on box. In a large bowl combine ricotta cheese, mozzarella cheese, parmesan cheese, eggs, salt, and pepper. Mix well. Add spinach and mix until combined. Pour olive oil into a 9×13 baking dish. Spread half of the mixture evenly in the bottom of the pan. Layer one third of the cooked lasagna noodles on top of the first layer. Repeat layers twice more. Sprinkle remaining parmesan cheese on top. Bake at 350 degrees F for 30 minutes. Let cool slightly before serving.
