This recipe for salad fennel is a great way to use up leftover vegetables in the fridge. The combination of sweet and savory flavors makes this salad a tasty addition to any meal.

You will need:

  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt

I used my favorite food processor to chop up the fennel bulb and then added the rest of the ingredients. Then I mixed everything together until well combined.
