Coconut rolls

These coconut rolls are made with almond flour, coconut oil, eggs, vanilla extract, baking powder, and salt. To make them even more special, we added some shredded coconut and sprinkles.

Almond flour (also known as almond meal) is simply ground almonds. It’s high in protein and fiber and low in fat. If you’re looking for an alternative to wheat flour, try using almond flour instead.
Coconut oil is rich in medium chain triglycerides (MCT), which help boost metabolism and burn calories faster than other fats. MCTs also promote healthy brain function and support immune system function.
Eggs contain choline, which helps maintain memory and concentration. Choline is also found in lecithin, which is used to emulsify oils and fats.
Vanilla extract contains flavonoids, antioxidants that protect against free radicals and reduce inflammation.

Mixing Instructions

To make the filling, combine the eggs, sugar, vanilla, salt, and butter in a large bowl. Beat with an electric mixer until well blended. Add the flour mixture and mix just until combined. Fold in the coconut chips. Cover and refrigerate for at least 1 hour.
To assemble the rolls, preheat the oven to 176°C. Line two baking sheets with parchment paper. Using a tablespoon measure, scoop out portions of the batter and place them 2 inches apart onto the prepared baking sheet. Bake for 15 minutes, then remove from the oven and let cool completely before removing from the pan.

If you’re looking for a healthier alternative to traditional cinnamon rolls, try making these coconut rolls instead! Made with whole wheat pastry flour, egg whites, and coconut oil, so they’re much lower in fat than regular cinnamon rolls.
