Massaman Curry

Massaman is a spicy Thai curry made with chicken, beef, pork, or shrimp. It’s often served over rice, but it also makes an excellent side dish for other dishes. We combine vegetables like carrots, potatoes, and green beans with paste to create a healthy vegetarian version of this popular dish.

To make this recipe, we start by sautéing onions and garlic in oil until translucent. Then, we add carrots, potatoes, and celery and cook them until tender. Next, we add green beans and stir-fry them until bright green. Finally, we add paste and mix everything together. We then simmer the mixture for 15 minutes before serving.

Carrots – 1/2 cup (about 3 ounces)
Potatoes – 2 small (about 6 ounces each)
Green Beans – 1 pound (about 4 cups)
Coconut Milk – 1 14 ounce can (1 1/4 cups)
Massaman Curry Paste – 1 tablespoon

This recipe uses a technique called stir-frying. Stir-frying involves using high heat to quickly brown food while stirring constantly. It’s an excellent method for cooking vegetables because it allows us to use less oil than other methods.

To make this recipe, I used my Vitamix blender to blend together the coconut milk, massaman curry paste, and water until smooth. Then I added the rest of the ingredients and blended again until combined.

To make this recipe, first prepare the massaman curry paste by combining the ingredients listed below. Then, add the vegetables to a wok or large skillet along with the coconut milk and bring the mixture to a boil. Reduce the heat to medium-low and continue to cook until the vegetables are tender. Serve hot.
