Saffron Spice
Saffron is an expensive spice that comes from crocus flowers. It has been used for centuries in cooking because of its distinctive flavor.
Ingredients
In India, saffron is extensively in food preparation. It has been used since ancient times as an ingredient in dishes such as pilaf, biryani, kedgeree, and other curries. Saffron is also used in desserts, beverages, and sweets.
This recipe calls for saffron, turmeric, ginger, garlic, cumin seeds, coriander seeds, cardamom pods, cinnamon sticks, cloves, bay leaves, peppercorns, salt, and water.
Method
To make this recipe, first prepare the rice by washing it thoroughly under running water until the water runs clear. Drain well. Then add the rice to a large pot along with the salt, turmeric, cumin seeds, and oil. Stir well to combine. Cover the pot and cook over medium heat for 15 minutes. Remove the lid and continue cooking for another 5 minutes. Fluff up the rice using a fork and serve hot.
Heat the remaining tablespoon of oil in a large skillet. Add the onions and fry until golden brown, about 8 minutes. Stir in the spices and cook 30 seconds more. Transfer the mixture to a plate lined with paper towels to drain.

To make perfect rice, follow these tips: 1) Wash the rice well before cooking; 2) Do not use old rice; 3) Rinse the rice several times after washing; 4) Drain the rice thoroughly before cooking; 5) Cook the rice in plenty of water; 6) Do not add salt to the water when cooking the rice; 7) Cover the pot tightly while cooking the rice; 8) Remove the lid as soon as the water starts boiling; 9) Let the rice stand off the heat for at least 15 minutes before serving.
